Black tea, which has a stouter taste and deeper coloring than green tea is gaining the interest of health researchers. It makes sense that black tea and green tea show similar promise; they are made with leaves from the same evergreen, Camellia Sinensis.
Leaves destined to become black tea are fermented. This fermentation is achieved by rolling the leaves vigorously to make them release a certain enzyme, then allowing them to sit for a few hours. During this time the enzyme interacts with oxygen and the leaves develop a heartier flavoring and their darker coloring.
